Fresh Chinook Salmon is delivered fresh daily during the summer months.
They are hand filleted to remove the skin and bones, and it is then packed
by hand with no additives, except sea salt when requested. It is then
cooked in its own natural juices that are low in calories, fat and sodium.
The meat and juices from this salmon are very rich in the Omega-3 fatty
acids, protein and vitamins making is a delicious and healthy treat.
When selecting salmon for smoking, only troll caught Chinook (King) Salmon
is used because of its excellent quality. The salmon is processed by hand,
just like the fresh fish, except it is given a light smoke from the native
Alderwood. The salmon is then canned, capturing the natural juices of
the fish itself. This is the same process used on all of the smoked and
canned fish we offer.
